Synthesis of Glutamic acid from MSG

Dissolve 80 g of monosodium glutamate in 130 mL of water then add 36 mL of hydrochloric acid with mechanical stirring. Let the mixture stand for 10 minutes and chill down in a freezer. Filter, wash with cold water and dry the glutamic acid in an oven. The yield is almost quantitative.
